Ingredients (4 servings):
• 500 g peeled shrimp
• 120 ml fresh grapefruit juice
• Zest of 1 grapefruit
• 2 tbsp olive oil
• 1 garlic clove, finely chopped
• 1 tbsp honey or agave syrup
• Salt and freshly ground pepper
• Fresh herbs (mint or coriander) for serving
Method:
- Mix grapefruit juice, zest, honey, olive oil, garlic, salt, and pepper.
- Add the shrimp and marinate for 20–30 minutes in the refrigerator.
- Heat a non-stick pan over high heat and cook the shrimp for 1–2 minutes per side.
- Serve with a little marinade, a splash of fresh grapefruit juice, and fresh herbs.
